Humble Hummus + Tasty Tortillas

YUM YUM YUM! A lifesaver if you're having a party or want a pre-supper nibble. This isn't exactly hummus but it does the job!
Hummus:
Ingredients:
1 Tin Chickpeas
1/2 Tsp Cumin seeds
1/2 Tsp Chilli flakes
1/2 Tsp Coriander Seeds
1 Clove of garlic
Juice of 1/2 a lemon
Olive Oil
Salt and pepper
Method:
Pound the cumin, chilli and coriander seeds in a pestle and mortar.
Whack all of the ingredients (except the oil) into a food processor. Roughly blend. (add a bit of lemon at a time- to avoid it being too lemony)
Add some oil to loosen it up and blitz again to a rough paste.
Season generously. Ask yourself- Does it need more lemon, salt, pepper, chilli? (I find that it needs quite a lot of lemon, to break through the oil)
This is delicious with my homemade Za'atar tortilla chips (recipe below)

Top-nosh Tortillas:
An Emerald Kimono Original
Method:
Preheat oven to 180°C
Slice up plain tortilla wraps into triangles. Spread out on a baking tray.
Drizzle with Olive Oil and sprinkle with dried mixed herbs and Za'atar (for a more sophisticated touch), salt and pepper.
Mix up with your hands. Spread out on the tray so they cook evenly.
Pop in the oven for around 10 mins or until golden brown and crisp (keep an eye on them because they will suddenly go!) They will crisp up more once taken out of the oven, so don't fret if they don't seem quite done.
Sprinkle with a little more salt and enjoy!

What is Za'atar?
Za'atar is a dried mix of herbs and spices which originates from the East. It is typically made up of sesame, thyme, oregano, sumac, salt and the za'atar herb (but mixes can vary). It is widely used in Middle Eastern cooking, particularly in the cuisine of countries such as Jordan, Syria, Israel and Lebanon. It is usually sprinkled over salads, and is delicious sprinkled over grilled halloumi.
