Luscious Lemon Pud

The perfect dinner time dessert. Quick, easy and to the point; you'll love it!



Serves 4


Ingredients:


50g Butter

50g Hazelnuts

8 Gingernut Biscuits

1 Lemon

Lemon Curd (shop bought or home-made- check out my lemon curd recipe here)

1 Punnet raspberries

1 Pot Creme Fraiche

1 Tsp Vanilla Extract or Paste

Splash of Milk

1 Tbsp Icing sugar

Good Quality Dark Chocolate (about 70%, for grating)


Method:

  1. Melt the butter in a frying pan

  2. Bash up the hazelnuts and the biscuits together (whack them with a rolling pin- get your anger out!)

  3. Remove butter from the heat. Add the crushed biscuits and nuts to the butter. Finely grate the lemon zest into the biscuit mix

  4. Divide the Biscuit mix between 4 glass pots. Press down to bottom of the pot

  5. Spoon as much lemon curd as takes your fancy over the biscuit base and pop a few strawberries on top

  6. In the creme fraiche pot mix the vanilla, icing sugar and a splash of milk. Mix well. Add another splash of milk if it needs loosening

  7. Divide the creme fraiche mixture into each pot. Grate over some of the dark chocolate for a touch of glamour
