Make-shift Lemon Tarts

In a rush and in need of a showstopping pudding? This is the ideal recipe for using up your home-made lemon curd. Admittedly, this is a bit of a cheats pudding, but no-one need know ;)


What you'll need:

Lemon Curd

Double Cream

Ready made mini tart cases (or one big tart case)

Raspberries or Strawberries


Method:

  • Whip up your double cream to soft peaks (don't over whip it or it will go solid)

  • Fold your lemon curd into the cream (as much as you like- it depends how lemony you want it)

  • Spoon some mixture into each tart case

  • Put them in the fridge for a couple of hours to set

  • Garnish with raspberries/strawberries and some mint


Top Tip:

If you have any leftover filling- pop it in a sealed container and put it in the freezer for a few hours. Et Voila- you've now made lemon curd ice-cream!
