Yet another salmon recipe, what can I say, I just love salmon. For something slightly different you could substitute the smoked salmon for smoked trout- it's just as delicious.
Ingredients:
100g cream cheese
100g creme fraiche
Lemon zest (half a lemon)
Squeeze of lemon
2 tsp creamy horseradish sauce
2 packets smoked salmon/ smoked trout (200g)
Handful of fresh dill
Packet of RAHMS mini croustades (pink box) (can be found in Waitrose, Sainsburys)
Method:
In a food processor combine the smoked salmon (or smoked trout), cream cheese, creme fraiche, dill, lemon zest, lemon juice, horseradish and salt and pepper
Check the seasoning. Does it need more lemon, salt or pepper?
Fill the little pastry cases with the mix and serve on a platter. It's a real winner!
Tip: Make a lot more than you think you'll need, because they'll be gone in the blink of an eye!
